Some days you just need soup. To warm up, to fill up, to eat less ‘other’ things…well for me, mostly the later, especially in January after all of the holiday yummy food.
I set out to find a simple black bean recipe. Most important? Honestly, that I had all the ingredients on hand and no waiting to soak beans. Straight out of the can with some extras, basically.
With only one can of beans in my pantry, the recipe had to be easily halved. Pinterest search and ta da…I found this one from Women Living Well.
Ingredients per the original recipe:
Best Ever Black Bean Soup
2 cans of seasoned black beans (drained, not rinsed)
1 can chicken broth
1 1/2 cups water
2 Tbsp olive oil
1 cup chopped onion
2 cloves of garlic minced
2 tsp chili powder
1/4 tsp cumin
I halved the measurements and swapped the chili powder and cumin for cayenne (just a preference). I will say, add some salt to taste. Other than that, the recipe was easy and less than 20 mins from pulling ingredients to in my mouth!
Definitely use an immersion blender for the best consistency.
Not sure how healthy after I added a dollop of sour cream and some salsa but you know…I ‘needed’ it. Hope you give a try and Happy New Year!
